Sweet Muffins

A sweet treat with your morning coffee or a snack any time of day, these muffins will remind you of a sweet Hawaiian pastry that is so decadently good.

2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon Olive Cart Hawaiian Pink Sea Salt
2 eggs
1 cup sugar
4 over-ripe bananas
1/2 cup Olive Cart Vanilla Bean Olive Oil
1 teaspoon cinnamon (or cinnamon sugar)
1/2 cup dried cranberries (optional)
1/2 cup coconut (optional)
1/2 cup chopped walnuts (optional)
Olive Cart Vanilla Chai Tea Jelly
Muffin papers

Preheat oven for 350. Mix sugar, baking powder, baking soda, sugar, salt and cinnamon in a bowl. Mix mashed bananas, oil and eggs in a separate bowl. Mix in dry ingredients. Fold in optional ingredients. Spoon into muffin pan with paper or non stick spray. Bake for 30 minutes or until a tooth pick comes out clean. Spread Vanilla chai tea jelly on top or to taste.
