Yukon Gold Lambrusco Vinegar Potato Salad

2 lbs Yukon Gold Potatoes, diced and cooked
3 Tablespoons Olive Cart California Arbequina Olive Oil
2 Tablespoons Olive Cart Lambrusco Vinegar
1 tsp mustard
1/8 tsp Olive Cart Michigan Flaked Sea Salt
1/8 tsp black pepper
1/3 Cup Kalamata Olives, Pitted and chopped
 

In a small bowl combine olive oil, vinegar, mustard, salt and pepper. Add Yukon gold potatoes and kalamata olives, Toss to coat evenly. Serve Hot or chilled.
