Turkey-Stuffed Bell Peppers

An easy and fairly quick way to wow your family, these stuffed peppers are incredibly delicious while being healthy (just don't tell your family).

3 large green, red or yellow peppers
1 TBSP Olive Cart Garlic Cilantro Oil
1 lb extra-lean ground turkey
1 large onion
2 garlic cloves, minced
2 tsp ground cumn
1 tsp Olive Cart Michigan Herb Blend seasoning
1/2 tsp salt
1/2 tsp pepper
2 medium tomatoes, finely chopped
1 3/4 cup shredded cheddar cheese + 1/2 cup to sprinkle on top
1 1/2 cups bread crumbs
1/2 tsp Olive Cart Smoked Sweet Paprika seasoning

Preheat over to 330 degrees. Cut peppers lengthwise in half, remove seeds and membrane. Place in a 9x13 pan coated with cooking spray.

In a large skillet, heat oil over medium high heat.  Cook and crumble turkey with onion, garlic and seasonings until meat is no longer pink, 8 to 10 minutes.  Cool slightly.  Stir in tomatoes, cheese, bread crumbs and smoked sweet paprika.

Generously stuff and mound pepper cavities with mixture. Bake, uncovered for 30 minutes (longer if you like your peppers softer). Allow to sit for 5 minutes after removing from oven, sprinkle with 1/2 cup cheddar cheese and serve.

Hints: Use one each of yellow, red and green peppers for a colorful table presentation.  Use almond flour in place of bread crumbs for a low-carb version. Served with a side salad, this serves six of your family members.
