Spicy Peanut Spaghetti Squash

One or our new favorite ways to prepare this wonderful squash that is packed with flavor. It can be a meal all by itself or pair it with your favorite pork or chicken dish. Very few ingredients are needed, and prep time is a breeze.

1 medium size Spaghetti Squash
2 TBSP Olive Cart Garlic Chili Oil
2 tsp Olive Cart Great Lakes Blend Seasoning
4 TBSP Olive Cart Thai Peanut Sauce

Preheat oven to 400 degrees. Line a baking sheet with parchment paper.

The safest way to cut most squashes is to trim the stem end off the end. Then stand the squash upright on the cut end and slice is in half. Remove seeds and loose strings in squash.

Rub 1 TBSP Garlic Chili Oil inside each squash cavity. Sprinkle generously with our Great Lakes Blend and rub into flesh. Turn squash over onto parchment paper so that the cavities are facing down. Pierce each cavity half four or five times with fork tines. Roast in oven for 50 minutes.

Remove from oven and while still hot, use a fork to loosen squash from sides of each cavity. Pour 2 TBSP Thai Peanut Sauce over each half and blend into the squash gently. Return to the oven for 5 minutes longer to allow sauce to melt into the squash.

Hint: If you can find the right size squash, it makes a great presentation to serve one squash half to each of your family members.
