Sauerkraut Dumpling Soup

This is a very versatile base for soup.  You can add whatever vegetables you would like.  Add Ham, Pork, Chicken, sausage, or Beef.

Skip the dumplings, and add noodles, rice, potatoes, or eat plain.

 

1 C chopped Celery

2 cloves Crushed Garlic

1 C sliced Carrots

½ C Minced Onions

½ C Chopped Green Peppers

1 C Pearl Onions (Frozen are great, no peeling needed)

1tsp-1TBLS of Olive Cart Gourmet Pepper Blend

3 TBLS Olive Cart Toasted Garlic Avocado Oil

2- 16oz Jars of Bavarian Style Sauerkraut (Contains caraway seeds & sugar) Drained, juice reserved.

1 can Beef Consume

32 oz of water.

 

Preheat a large skillet to medium heat.  Add Olive Cart Toasted Garlic Avocado Oil, celery, garlic, onions, carrots, and peppers an Olive Cart Gourmet Pepper blend. Sauté until onions are translucent.

In the meantime, in a stock pot add beef consume, water, and Bavarian style sauerkraut juice. Set aside.

When onions are translucent, using a slotted spoon, transfer contents of skillet to stock pot, save as much of the liquid in the skillet.  Place Bavarian Style Sauerkraut in skillet and return skillet to medium heat. Sauté until the Bavarian Style Sauerkraut starts to brown.  Add to stock pot and move the stockpot to the medium heat burner.  While the soup start to come to a soft boil, prepare your dumplings.

 

Dumplings:

1 ½ C all-purpose flour

2 tsp Baking Powder

¾ tsp salt

1 tsp Olive Cart Pesto Seasoning optional.  Can also use whatever your favorite spice blend is.

1 egg

½ cup milk

 

Mix all dry ingredients together in a bowl.  Whisk egg until creamy and frothy, pour over dry ingredients. Add milk.  Stir until it comes together in ball.

 

Keep the soup at a soft boil and drop dumpling batter by spoonful into it.  Cover and let it be for 15 min.  No peaking, unless you have a glass lid. : )

 

Remember: You can add Tomatoes, any vegetable, beans, or greens.  Have fun and change it up.
