Raspberry Lime Chai Crepe Cakes

1/4c Olive Cart Vanilla Chai Jelly
 2 tsp lime juice
10 raspberries rinsed and mashed with a fork.  (you want it to almost look like individual sections of the raspberry, or 2 or 3 clumped together)
pinch of Olive Cart MI Sea Salt Flakes
4 whole raspberries
8-9" crepes. (Homemade are better but feel free to buy the ones in the grocery store produce department.)
2 1/2-3" round cookie cutter 
 
Using the cookie cutter, cut your cake layers.  (you will get 8 layers per crepe.) don't waste your trimmings though. They make good nibbles
 
Filling:
In a bowl mix the Olive Cart Vanilla Chai Jelly, 2 tsp lime juice, Olive Cart MI Sea Salt flakes and 2 TBLS of the mashed raspberries. 
 
On a small plate place your 1st layer of crepe.  Spread 1/2 tsp-3/4 tsp of the filling on the center of the crepe, leave a little edge as the filling will spread as you stack. Place your next layer and repeat until you place the 8th layer.  On top of the 8th layer you will place 1 whole raspberry in the center, and little individual pieces of the mashed raspberries, that were not used in the filling.
 
You could add lime zest or dollops of whip cream to the top as well if you are so inclined.
