Mangos & Cherry Salsa With Cherry Balsamic

2 Mangoes
2 Cup Bing Cherries or more if wanted
1/4 Cup Chopped Shallot
4 Tablespoons Olive Cart Cherry Orchards Balsamic Vinegar
1/4 Cup chopped Cilantro

 

Cut mango into small cubes 1/2 inch and set aside in separate bowl. Refrigerate.

Pit the bing cherries and cut in half. Place in bowl with chopped shallots.

Add the Olive Cart Cherry Balsamic Vinegar to the bing cherry mix only. Toss and let sit for half hour.

Just before using salsa add mangoes and cilantro. Toss gently until just coated and serve.

This recipe is great with grilled pork tenderloins, chicken, fish.
