Lime Cilantro Pesto Sauce with Seared Scallops

3 large scallops per person
1 cup mashed potatoes per person
1/3 cup Olive Cart Lime Cilantro Pesto ( Recipe to follow)
2 Tablespoons whole cream
1-2 Tablespoon clam juice
Fresh chopped chives
4 sprigs fresh chive 4 inch length
Fresh cracked pepper

 

Make mashed potatoes and keep warm.

In saucepan, add 1/3 C. Olive Lime Cilantro Pesto per person. To that add 2T cream and 1T clam juice per person. Combine well. If sauce is too thick: add a bit more clam juice. Warm over low heat––DO NOT BOIL! Season with salt and pepper.

Sear scallops in butter til done.

To plate dish, spread Lime Cilantro Pesto Sauce evenly on bottom. Place a large dollop of mashed potatoes in center of plate and lean scallops around the base of potatoes. Sprinkle chopped chives on sauce and place sprigs of chive on top of potatoes. Fresh Cracked pepper on top of potatoes. Serve

Pesto:
 

2 Cilantro
1/2 cup toasted Almonds
Olive Cart Lighthouse Lime Extra Virgin Olive Oil
2 cloves garlic
salt and pepper to taste.

In a food processor, combine, cilantro, garlic, and almonds. Slowly drizzle Olive Cart Lighthouse Lime Oil til desired consistancy. Season with salt and pepper to taste.

For a different taste substitute pumpkin seeds for the almonds.
