Lemon Herb Cod Fillets

Quite frankly, this is the best cod recipe we have ever tasted, and it is less than 250 calories per serving so you can enjoy it guilt-free!

3 TBSP Olive Cart Lakefront Lemon Olive Oil, divided
1 lb thickly cut cod loin fillets
1 TBSP lemon juice
1/3 cup Almond Flour
4 tsp Olive Cart Great Lakes Blend seasoning
ΒΌ cup dry white wine
 

Drizzle lemon juice over cod fillets and allow to sit while preheating oven. Preheat oven to 400 degrees.

Place 2 TBSP of lemon olive oil in an oven-proof glass or ceramic dish. Add cod to the dish and turn to coat all sides. Bake cod in oven for 10 minutes.

While cod is in its initial bake, mix almond flour (or crushed crackers) with Great Lakes blend seasoning and 1 TBSP lemon olive oil.

Remove cod from oven, drizzle with white wine and sprinkle on half of the crumb mixture. Turn cod over and repeat with white wine and crumb mixture. Return to the oven and bake for an additional 10 minutes.

Note: This recipe uses almond flour to keep the carbs count extremely low. But if you prefer you can substitute half of a sleeve of crushed buttery crackers.
