Lambrusco Keto Bread

If you are missing bread while on a keto diet, this recipe will satisfy your cravings without sending you out of your keto zone.  Especially yummy with butter and very versatile as you can make it into any shape you wish for rolls or buns and even create fantastic garlic bread!


5 TBSP ground psyllium husk powder
1 1/4 cups almond flour
2 tsp baking powder
1 tsp Olive Cart Himalyan Pink Sea Salt
1 cup water
2 tsp Olive Cart Lambrusco Vinegar
3 egg whites


Preheat oven to 350 degrees

Mix the dry ingreedients in a large bowl. Bring the water to a boil.

Add the Lambrusco vinegar and egg whites to the dry ingredients and combine well. Add boiling water while beating with a hand-held mixer for about 30 seconds, being careful to not over mix. The dough will be the consistency of play doh.

Oil an baking sheet with your favorite Olive Cart olive oil. With your hands oiled, form dough into whatever shape you desire--rolls, buns, etc. an place at least two inches apart on oiled sheet. Will yield roughly 6 to 8 rolls or buns.

Bake on lower rack of oven for 50 to 60 minutes depending on the shape and size of your creations. They will be done when you hear a hollow sound when tapping on the bottom of them.

HINT: For garlic bread, simply split, drizzle with Olive Cart Avocado oil and sprinkle with freshly-grated mozarella cheese and parsely. Place in oven until cheese melts (about 5 minutes)
