Instant Pot Balsamic Pork Tenderloin
 
2 lbs lean pork tenderloin, cut in half lengthwise
Olive Cart Garlic Avocado Oil
1/2 cup 25 year St. Joe or South Haven Balsamic
3/4 cup chicken broth
2 TBS soy sauce
1 TBS brown sugar
1/2 tsp cumin
1/2 tsp garlic powder
1/4 tsp chili powder (or more to taste)
salt and pepper
 
*combine balsamic,chicken broth and soy sauce
 
*combine br. sugar, cumin, garlic powder, pepper and salt (if using) 
 
Rub the pork with a light rub of the Avocado oil and then the sugar/spice mix. Heat the pressure cooker on saute and add 1 TBS of Avocado oil. Brown all sides of the tenderloin. Add the balsamic/broth mixture and carefully scrape all browned bits from bottom of pan. Lock lid into place and cook on HIGH for 3 minutes. Use the Natural Pressure Release (this will take about 12-15 minutes) Let tenderloin rest on cutting 5 minutes before slicing. *If you like the glaze in the pan to be a little thicker, simply choose the saute funtion and cook the sauce down to the desired consistency.
