Instant Pot Healthy Chicken Parmesan

1 TBS Garlic Avocado oil
1 jar Olive Cart Artichoke/Olive Pasta sauce
3 TBS Parmesan cheese
Freshly ground black pepper
4 thin chicken cutlets or 3 chicken breasts pounded thin
1/2 tsp kosher salt
1/2 tsp oregano
4 oz fresh mozzarella cheese, grated
fresh chopped basil, optional
 
*this recipe does not call for any breading or frying so it is a much lighter version of a traditional Chicken Parmesan.
 
Salt, pepper and oregano chicken. Add Garlic Avocado oil to pressure cooker pan and using saute function, lightly brown chicken on one side. Add OC pasta sauce and 2 TBS of the Parmesan cheese. Lock the lid on the cooker and cook on LOW for 3 minutes. Manually release the pressure.
 
Transfer the chicken to a shallow pan and sprinkle with remaining Parmesan cheese and Mozzarella. Place under broiler until lightly browned. Serve with side of Olive Cart Pasta of choice and remaining sauce. Delicious!!  (Time: approx 15 min)
