Healthy Turkey and Veggies Skillet Pasta

Delicious pasta dishes do not have to be unhealthy as long as you load them with low fat turkey and yummy vegetables. Create this wonderfully tasty meal in an electric skillet or extra-large skillet pan for quick and easy cleanup.

2 TBSP Olive Cart Tuscan Herb Olive Oil
1 medium yellow onion, chopped
¼ cup Olive Cart Sweet & Spicy Garlic Cloves, chopped
1 lb ground turkey
2 tsp Olive Cart pizza seasoning
1 large bell pepper (we prefer yellow or orange for added color)
1 jar Olive Cart Artichoke & Olive Pasta Sauce
1 pint cherry tomatoes, sliced in halves
8 oz. white mushrooms, sliced
Farfalle or Rotini Pasta (or either of our Ruffles pasta)
Grated Parmesan Cheese

Prepare pasta according to box directions while working on the rest below. Drain and set aside.

Heat skillet to Medium High heat. Drizzle 1 TBSP Tuscan Herb Oil into pan. Add onion and garlic. Sautee until onions are translucent, approximately 5 minutes. Add turkey to mixture and continue to sauté, breaking up turkey with back of a large wooden spoon. Cook for approx. 7 to 10 minutes until turkey meat is no longer pink. Stir in Pizza seasoning then remove from pan and set aside.

Remove top and seeds of bell pepper and slice into long strips and slice these again in half-size strips. Add remaining TBSP of Tuscan Herb olive oil to the skillet, then add pepper strips and sauteed for 7 to 10 minutes, until they are tender. Add meat mixture, pasta sauce, tomatoes, mushrooms and pasta to skillet. Continue to heat on medium high until sauce begins to bubble. Reduce heat to simmer and allow flavors to meld for 10 minutes.

Before serving, sprinkle with grated parmesan cheese.
