Healthy Monster Cookies

Trying to be healthy but still have a craving for cookies? By replacing butter with olive oil and decreasing the sugar by adding our rich low-suagar balsamic, these cookies are very healthy and yummy too!

Ingreedients:
3/4 cup creamy natural peanut butter
1/4 cup Olive Cart Churned Butter Olive Oil
1/2 cup light brown sugar
2 large eggs
1 TBSP Olive Cart Creme Brulee White Balsamic
1 1/2 cups quick-cooking oats
1/2 tsp baking soda
1/4 tsp salt
1/2 cup chopped walnuts (can eliminate if allergic)
1/2 cup caro baking chips (can use semisweet chocolate chips)
Dark chocolate chunk baking chips (or candy-coated chocolate pieces)

Preheat oven to 350 degrees.  Line a large baking sheet with parchment paper.

Beat peanut butter, olive oil and sugar in a large mixing bowl until creamy.  With mixer still running, add eggs one at a time and then add Creme Brulee balsamic. Add oats, baking soda and salt to bowl and beat on low speed. Stir in nuts (if you prefer) and carbo chips and stir well.  Drop dough onto baking sheet in 1 TBSP size.  Press chunk chips into each cookie.

Bake for approximately 12 minuts until light golden brown.  Remove from oven and allow to cool on sheet at least 5 minutes before transferring to a wire rack to cool completely.

Note: This recipe makes approximately 2 1/2 dozen cookies but may be doubled.  To make gluten-free, be sure to purchase oats that specify "gluten-free" as some oats can be cross-contaminated with wheat.
