Fresh Blueberry Balsamic Compote Over Vanilla Pudding

3 Cups fresh blueberries

2 Tablespoons butter
1/4 cup honey
1/4 cup Olive Cart Blueberry Fest Balsamic Vinegar
Dash of cinnamon
1/4 teaspoon of Vanilla extract
Fresh mint sprig
1 cup heavy whipping cream
Prepare the Vanilla Pudding and refrigerate until cool and set covered.

Whip the cream until it is fluffy peaks. Gently fold into the pudding until blended. Return to refrigerator covered.

To prepare the compote:

In medium saucepan add butter, honey, cinnamon and Olive Cart Blueberry Fest Balsamic Vinegar. Melt and blend well bringing to soft boil. Reduce heat and add fresh blueberries. Cook stirring gently for about 4-5 minutes. Sauce will begin to look dark blue. Add vanilla and stir in. Remove from heat and allow to cool for a few minutes while you put pudding in individual serving bowls. Top with blueberries and mint sprig. Serve.
