Fancy Roasted Red Potatoes

6 medium to large red new potatoes
¼ cup Olive Cart Slow-roasted Garlic Oil
¼ cup Olive Cart Scallion Greens Oil
1 ½ tsp Olive Cart Himalayan Pink Salt
Fresh Ground Pepper to taste
1 cup fancy shredded Cheddar cheese
1 TBSP freshly chopped parsley or chives for garnish

Preheat over to 400 degrees.  Place a potato in a large spoon, slice lengthwise through to spoon, using spoon as a guide, making about 12 slices total in each potato.  Combine olive oils and carefully toss potatoes, ensuring that oil gets in between the potato slices.  Arrange potatoes on a baking sheet lined with foil, cut sides up.  Sprinkle with salt and pepper to taste.  Bake for 30 minutes until edges are golden brown.  Sprinkle with cheese (if desired) and bake an additional 15 minutes.  Remove from oven and sprinkle with fresh parsley or chives.  Serves 6 as a side dish.
