Decadent Fudgy Keto Brownies

Missing your sweets and chocolate while on your keto diet?  With these fudgy keto-friendly brownies, there's no need to anymore. They're great alone but if you want to go extra decadent just whip up a can of coconut milk with some confectioners-style erythritol for a great whipped topping.


1/2 cup water
2 TBSP unflavored gelatin
1 cup tahini
1/4 cup Olive Cart Avocado Oil
3/4 cup confectioners-style erythritol
2/3 cup caco powder
1/4 tsp Olive Cart Himalyan Pink Sea Salt
4 to 8 drops Stevia liquid sweetner (to taste)
1/4 tsp baking powder


Preheat oven to 350 degrees. Line an 8" square baking bank with parchment paper, allowing to hang over the sides for each removal.

Place the water in a small saucepan, sprinkle with gelatin but do not mix and let sit for 5 minutes.  Turn heat on to medium temperature and bring to a light boil, stirring constantly. Set aside.  If mixture beings to set prior to using in next steps, simply warm on low heat before using.

Place tahini and Avocado Oil in bowl of a standing mixer and mix until combined.  Add hot gelatin liquid, erythritol, cacao powder, Himalayan sea salt, stevia and baking bowder.  Combine at medium speed of mixer.

Transfer the batter to the prepared baking dish and press down with palms until even in pan.  Bake for 25 to 30 minutes until the corners are crisp and toothpick inserted in the middle comes clean.

Allow brownies to cool in pan for a minimum of 30 minutes.  Lift out with edges of parchment paper and cut into 16 squares.

HINT: For Chocolate Orange Brownies, simply use Olive Cart Blood Orange Avocado oil.
