Cinnamon Crunch Cereal keto friendly

So easy, tasty, and stays crunchy.  5 simple ingredients.

Preheat oven to 300 degrees.

Cereal

  • 1 C fine almond flour
  • ½ cup unsweetened shredded coconut
  • 1/3 cup Natural Granular Erythritol (100% natural zero calorie sweetener)
  • 2 tsp ground cinnamon.  I recommend Ceylon Cinnamon, hard to find but worth it.
  • ¼ cup + 1.5 TBLS Olive Cart Avocado oil Can use infused avocado oil as well. This batch I used Lemon infused.  I want to try it with Olive Cart Butternut Squash Seed oil too.
  • ½ tsp sea salt

Cinnamon Sugar Topping

  • 1 TBLS Granular Erythritol sweetener
  • 1 tsp Cinnamon

Add all cereal ingredients to a food processor.  Pulse until granular.

Line a baking sheet with parchment paper. Pour cereal mixture in to center and press down.  Cover with another piece of parchment and roll out using a rolling pin, until pressed together.   It’s about 1/8” thick. Remove top piece of parchment paper and bake for 25-30 mins.

While cereal is baking, mix the topping together and set aside.

As soon as you remove the cereal from the oven sprinkle the topping over the square of cereal. 

Do not attempt to break apart cereal as it will be soft until it cools.   Cool completely and break into bite size pieces. Store in air tight container. 

 

Makes a crispy cereal when served with milk.  Can also be used as a snack, in yogurt or ice cream, over fruit…

Next variation I am going to try is chocolate orange.
