Grilled Watermelon Salad

1/2" Watermelon slices cut in squares (Qty depends on amout of servings you need)  2 squares per person.
Baby Arugala 3/4 cups per serving rinsed and dried,
2 TBS of goat cheese per serving 
1/4 Cup Olive Cart Bittersweet Chocolate Orange Balsamic. (or balsamic of your choice)
Olive Cart Mango Fiesta E.V.O. (or oil of your choice)
Fresh Ground Black Pepper & Sea Salt to taste.
In a small saucepan over medium heat, reduce the Olive Cart Bittersweet Chocolate Orange Dark Balsamic for about 5 minutes.  (You can probably skip this step, as the balsamic is probally thick enough on it's own but the flavor is richer when you reduce slightly) Set off to side to cool.
Place a nonstick grill pan or skillet over medium heat.  Brush a light coating of the Olive Cart Mango Fiesta Oil on both sides of the slices of watermelon.  Place in hot pan.  Cook 2 minutes per side or until you see grill marks or slight charring.
Place 1/4 cup of baby arugala on the plate, place one slice of watermelon on top of it.  Sprinkly 1 TBS of the goat cheese crumbles over the water melon.  Repeat the layers.  Drizzle the Olive Cart Bittersweet Chocolate Orange Balsamic and the Olive Cart Mango Fiesta E.V.O over the top.  Finish with fresh ground black pepper and sea salt to taste.
