Creamy truffle bacon mac and cheese

2 3/4 Cup Whole milk
4Tbs Salted butter
1/4 Cup All purpose flour
1tsp salt
1/2 tsp black pepper
1/2 tsp dry yellow mustard
1/8 tsp Cayenne pepper
Olive Cart White truffle oil
1 1/4 cups Gruyere cheese freshly grated
1 1/4 cups extra sharp white cheddar freshly grated
2/3 Cup Parmesan cheese freshly grated
2 1/2 cups uncooked macaroni
as much bacon as you want ( at least 4 slices ) cooked and crumbled.( I used a whole package , about 6-8 slices.)
Grate your cheese put it in bowls and set aside.
put your milk in a microwaveable bowl heat ( just warm not boiling ) and set aside.
fill up a large pot with salted water and bring to a boil.
While your water is getting warm it's time to start on your sauce, In a large sauce pan melt your butter then add your flour while whisking. You are making a roux so keep whisking till its nice and golden brown and its gone smooth.
add your warm milk and continue to whisk until mixed
add your salt, mustard, black pepper and cayenne
now add your cheeses a little at a time ( continue stirring )
until smooth.Cover and set aside.
now its time to cook those noodles, throw your uncooked macaroni into the pot and cook until desired tenderness
Drain macaroni then put it back in the pot.
Add your cheese sauce and stir and you have a nice mac and cheese right there but since I don't know when to stop we are going to continue.
Cook that bacon, crumble and stir into your mac and cheese.
add your truffle oil to the pot and stir in ( this is done to taste )
