Cranberry Curry Lamb Chops

8 rib lamb rib roast
1/2 tablespoon Olive Cart Curry Powder
1 jar Olive Cart Cranberry Orange Chutney
3/4 teaspoon salt
3/4 teaspoon pepper

Preheat oven to 425*. Sprinkle lamb on all sides with salt, pepper and curry, rub into meat, let sit 30 minutes. Brown lamb in tablespoon of Olive Cart Tandoori oil in a 12 inch cast iron skillet, turning meat every 5-6 min to brown on all sides. Place lamb, meat side up, in skillet and slather chutney on tops and sides of meat. Bake for 15-18 min or until thermometer reads 130*. Remove from oven and let rest 10 min. Cut into chops.
