Nicoise Red Wine Vinegar Dressing

1/4 cup Olive Cart Lambrusco Vinegar
Green onion, sliced
2 tsp. Dijon mustard
1 cup Olive Cart California Arbequina Olive Oil
1 1/2 tsp. thyme
1 1/2 tbsp. basil
3 oz. capers, drained
2 oz. sliced black olives, drained

This dressing is very versatile. It can be used on salad; as a topping for fresh cooked vegetables like green beans, potatoes or spinach; or as a finisher for fish such as grilled tuna or swordfish.

Simply whisk all of the ingredients together in a bowl and serve!
