Sweet Pepper Coleslaw

14 oz coleslaw mix
1 green onion, chopped
2/3 cup Mayonnaise
1/3 cup Olive Cart Roasted Red Pepper Chutney
2 Tbsp Olive Cart Lambrusco Brown Sugar Vinegar
salt and pepper to taste

Combine all ingredients, chill for 2 to 3 hours before serving.

Creamy Chicken Pasta

1 pound chicken breast
2 tablespoons Olive Cart Tuscan Herb olive oil
salt and pepper
1 tsp garlic powder
1 tsp butter
3 garlic cloves (minced)
2-3 small tomatoes (diced)
2 cups spinach
2 teaspoon Olive Cart Sun-Dried Tomato Basil seasoning
1 teaspoon red pepper flakes (optional)
1 teaspoon paprika (optional)
1.5 cup heavy cream
1 cup Parmesan cheese
10oz. penne pasta (or pasta of your choice)

Instant Pot Balsamic Pork Tenderloin
2 lbs lean pork tenderloin, cut in half lengthwise
Olive Cart Garlic Avocado Oil
1/2 cup 25 year St. Joe or South Haven Balsamic
3/4 cup chicken broth
2 TBS soy sauce
1 TBS brown sugar
1/2 tsp cumin
1/2 tsp garlic powder
1/4 tsp chili powder (or more to taste)
salt and pepper
*combine balsamic,chicken broth and soy sauce
*combine br. sugar, cumin, garlic powder, pepper and salt (if using)

1 TBS Garlic Avocado oil
1 jar Olive Cart Artichoke/Olive Pasta sauce
3 TBS Parmesan cheese
Freshly ground black pepper
4 thin chicken cutlets or 3 chicken breasts pounded thin
1/2 tsp kosher salt
1/2 tsp oregano
4 oz fresh mozzarella cheese, grated
fresh chopped basil, optional
*this recipe does not call for any breading or frying so it is a much lighter version of a traditional Chicken Parmesan.

Vanilla Chai Thumbprint Cookies

3/4 Cup Butter Oil
1/2 Cup Brown Sugar
2 Eggs (yolk only)
2 Teaspoons Lemon Peel
1 Teaspoon Vanilla Extract
2 1/4 Cup Flour
3/4 Cup Chopped Nuts (doesn't have to be specific)

Mix all together
Grease cookie sheet
Roll palm sized ball of cookie dough in hand
Place on cookie sheet and press a thumbprint into middle of cookie
Place Vanilla Chai Jelly into thumbprint of each cookie
