Best Chocolate Chip Pumpkin Muffins

You do not want to wait until fall to create these amazing pumpkin muffins. Our Orange White Balsamic pairs beautifully with pumpkin and allows you to reduce the amount of added sugar and our vanilla bean olive oil eliminates unhealthy fats for this yummy muffin.

1 ¾ cup flour
1 tsp baking soda
2 tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp ground clove
¼ tsp ground ginger
¾ tsp salt
2 large eggs, room temperature
½ cup Olive Cart Orange White Balsamic
½ cup packed light brown sugar
1 ½ cup pumpkin puree (fresh or canned)
½ cup Olive Cart Vanilla Bean Olive Oil
½ cup Semi-Sweet Chocolate Chips
½ cup Coarsely chopped walnuts

Preheat oven to 350 degrees. Spray 18 muffin tins lightly with non-stick spray and set aside.

In a large bowl, whisk flour, baking soda, cinnamon, nutmeg, cloves, ginger and salt together until well combined. In a medium bowl, whisk eggs, then add Orange White balsamic and brown sugar and whisk until combined. Whisk in pumpkin and Vanilla Bean Olive Oil. Pour wet mixture into the dry mixture and combine but do not overmix. Gently fold in chocolate chips and walnuts.

Spoon mixture into prepared muffin tins. Bake for 20 minutes. Remove from heat and allow to cool as long as possible before you cannot resist them any longer. Yum!
