Smoky Mustard Chicken Bake

A quick and easy way to create a healthy chicken and vegetables meal with an end result that is sweet and tangy.

1 1/2 pounds thin sliced chicken breast
1 pound tiny potatoes, halved
1 pound green beans, tips nipped and cut in 1-2 inch pieces
1 small onion, sliced
1/4 cup Olive Cart Maple Pecan Mustard
4 tbsp Olive Cart Toasted Garlic Avocado Oil, divided in 2
2 tbsp Olive Cart Smoky Chicken Seasoning, divided in 2
Salt and pepper to taste

Preheat oven to 375°F

Combine potatoes, green beans, and onions in a 9×13 casserole dish. Toss with 2 tbsp Garlic Avocado Oil (salt and pepper if desired) and 1 tbsp Smoky Chicken Seasoning. Pat chicken breast dry, sprinkle with remaining seasoning. Place on top of veggies. Combine rest of the oil and mustard. Pour over chicken breast. Cover with foil and bake for 35-40 minutes. Enjoy!
