Southwestern Pumpkin Seed Oil Hummus

5 cloves garlic
1/4 Cup fresh cilantro chopped
1/4 Cup fresh lemon juice
1 tsp citrus zest (optional)
2 Tbsp Olive Cart Pumpkin Seed Oil
4 Tbsp Tahini ( ground sesame seed paste)
1-15oz can of pumpkin (not pumpkin pie filling)
2 tsp cumin
1 tsp Olive Cart Chipotle Sea Salt
Chili Toasted Pumpkin seeds for garnish

Put cleaned garlic cloves, chopped cilantro, lemon juice, tahini, canned pumpkin, cumin, chipotle salt into a food processor, turn on high and drizzle in Olive Cart Pumpkin seed oil. Blend until smooth.

Transfer to a bowl, cover and refrigerate overnight. When serving garnish hummus with additional Olive Cart Pumpkin Seed Oil and chili toasted pumpkin seeds.
